Strawberry and Rose Butter Recipe

Butter. It’s good. It’s real good and there are a lot of substitutes which are fine too, my favorite is olive oil but you know, somethings in life are just too good to not enjoy once in a while and that’s better. I’m literally reminded every time I cook how much better it makes things taste which of course, in life, anything that good has to mean it’s not good for you.

As a lover of The Food Network, The Chew, The Barefoot Contessa, Julia Child, Giada, food magazines, etc… I have come across many times the idea of making flavored butter. It obviously makes cooking a bit easier when you have a busy lifestyle. Just put butter and basil and garlic whipped together and toss it with meat or veggies and ta-da! Yum!

And though I’m probably a bigger fan of savory than sweet (and love them most when combined), I decided to make a sweet butter that is perfect for Valentine’s Day! Not to mention, I’ve been quite the good girl lately as far as eating healthy goes so I’m I really want a treat! I was really craving something yummy to put on croissants, waffles, or pancakes and this Strawberry and Rose butter is it!

Rose (and lavender) are my two favorite edible flower flavors and strawberries are one of my favorite fruits so I knew combined, rose and lavender would really be a special flavor. It doesn’t hurt either that it is pink for the celebration of Cupid coming up!

Here’s how to make this yummy butter a part of your next brunch!

Ingredients:

  • 2 tablespoons of sugar
  • dash of salt
  • 4 large chopped strawberries (frozen work too!)
  • half a stick of butter
  • teaspoon of food grade rose petals

Instructions:

  • Put the strawberries, sugar and salt in a sauce pan and boil.
  • Drain the sugary, strawberry liquid from the strawberries. Put aside.
  • Whip the butter when room temperature with an electric whisk. Add sugar and rose petals.
  • Whip and mix until completely blended. Put in small mason jar.
  • Serve on baked goods and enjoy! Perfect for teas, brunch, and dessert!
